Hearty Apple Walnut Muffins
These muffins are great as an afternoon snack with hot herbal tea, or with scrambled eggs for breakfast.

Ingredients

white wheat flour

oatmeal
(rolled)

honey
(or 3/4 cup brown sugar)

baking powder

salt

cinnamon powder

allspice

apples
(grated or finely chopped (about 2 cups))

whole egg plus 2 whites
(beaten)

oil or butter

pecans
(chopped)

soaked raisins
(soaked in boiling water for 5 minutes and then drained.)

Instructions

Preheat oven to 350 degrees.

Grease and flour 18 muffin tins.

Mix all ingredients together. Mix as little as possible. Spoon into muffin tins.

Bake 15 - 20 minutes or until slightly brown on top. (These are dense and don't rise much.) Serve with lots of butter!
