Hearty Apple Walnut Muffins

These muffins are great as an afternoon snack with hot herbal tea, or with scrambled eggs for breakfast.

Ingredients
  • 2 cup white wheat flour
  • 1 cup oatmeal (rolled)
  • 1/2 cup honey (or 3/4 cup brown sugar)
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp allspice
  • 4 apples (grated or finely chopped (about 2 cups))
  • 1 whole egg plus 2 whites (beaten)
  • 1/4 cup oil or butter
  • 3/4 cup pecans (chopped)
  • 1/2 cup soaked raisins (soaked in boiling water for 5 minutes and then drained.)
  • 1/4 cup milk
Instructions
  1. Preheat oven to 350 degrees.
  2. Grease and flour 18 muffin tins.
  3. Mix all ingredients together. Mix as little as possible. Spoon into muffin tins.
  4. Bake 15 - 20 minutes or until slightly brown on top. (These are dense and don't rise much.) Serve with lots of butter!
